Extracting DVD tracks

To extract DVD tracks identify the actual tracks first:

HandBrakeCLI -Z "Very Fast 1080p30" -i DVD.ISO -o test.mp4 -t 0 |& grep -e title -e "+ duration"

After that run the following command with the wanted title number:

HandBrakeCLI -Z "Super HQ 720p30 Surround" --audio-lang-list deu -i DVD.iso -o filename.mp4 -t <track#>

Converting Satellite Transport Stream (*.ts) to MKV

Convert all files using ffmpeg while keeping all streams (video/audio/subtitles):

for f in *.ts; do ffmpeg -i "$f" -c copy -map 0:v -map 0:a -map 0:s "$f".mkv; done

This prevents any conversion and thus keeps the quality at the source level. Quotes are required to work correctly with filenames containing spaces.
